I wanted to set out some basic knitting instructions as a refresher so here it is. The process of knitting has three basic tasks: (1) the active (unsecured) stitches must be held so they don't drop; (2) these stitches must be released sometime after they are secured; and (3) new bights of yarn must be passed through the fabric, usually through active stitches, thus securing them.
A baby blanket is the perfect place to practice more complex pattern stitches. It can be a humbling experience to the perfectionist. Hem top should be knitted by taking a stitch from the first row, and should be hanged on the needle.
Various closures for the garments, such as frogs and buttons can be added; usually buttonholes are knitted into the garment, rather than cut. Once you learn these two stitches you will find everything else is just a variation of the knit and purl stitches. Extra curvature can be introduced into knitted garments without seams, as in the heel of a sock; the effect of darts, flares, etc.
Thicker yarns generally require thicker knitting needles, whereas thinner yarns may be knit with thick or thin needles. Thus, a simple way to change gauge is to use different needles, which is the basis of uneven knitting.
It will just some time at the beginning, but you will learn and get experience. You may also want to consider finding a local knitting group or meeting online others who share your hobby.
